Technological Workshop on Dairy Production and Processing

June 5, 2025 I ITAQ Saint-Hyacinthe

On June 5, a group of Op+lait members had the opportunity to explore two key aspects of the dairy industry: milk production and processing.

​

Thanks to Guylaine Sauvé, Justin Veilleux, Saray Rangel, Alexandre Porlier, Stéphane Martin (ITAQ) and the support of Op+lait, we learned about the most popular cow breeds in Quebec, major trends in dairy product consumption, the main causes of mastitis, and the journey milk takes from the farm to the factory.

We also participated in a workshop on detecting spoiled milk by smell, visited the ITAQ cheese factory, explored the virtual mini-farm and its ventilation systems, and ended the day with a visit to the Maskita farm. There, we had the opportunity to get our hands dirty and gain a better understanding of how a real working farm is organized.
