This entertaining and informative podcast aims to present the work currently being carried out by researchers who are members of the Op+lait cluster, aiming to contribute to maintaining the production of optimal quality milk in the province. Milk quality is an important issue in Quebec, as the dairy industry is one of the most important agricultural sectors. It consists of more than 5,000 dairy farms that produce nearly 3.5 billion litres of milk per year. In addition, it alone generates more than $6 billion in Canadian gross domestic product and more than 82,000 jobs.
Although very strict hygiene procedures are followed in milk production and processing, certain microorganisms such as bacteria can grow, particularly due to the high nutritional value of milk. Unfortunately, some of these microorganisms can sometimes cause problems such as milk curdling or the development of undesirable odours and flavours in cheese.
Episode 1
In this first episode, titled “The Invisible Threat,” experts discussed the issue of undesirable microorganisms in milk. Postdoctoral researcher Coralie Goetz called on experts in this field: researchers Denis Roy and Julie Jean, both professors of food science at Laval University's Faculty of Agricultural and Food Sciences, as well as postdoctoral researcher Mérilie Gagnon.
Episode 2
In this second episode titled “The Challenge,” experts addressed the issue of milk quality from the perspective of its composition. Postdoctoral researcher Coralie Goetz called on experts in this field, including researcher Simon Dufour, professor of epidemiology at the Faculty of Veterinary Medicine at the University of Montreal, and doctoral student Daryna Kurban.
In this episode titled “The Solution,” we will discover the new strategies devised by Quebec researchers to combat bovine mastitis. To discuss this topic, I have invited experts in the field: researcher François Malouin, professor of microbiology at the University of Sherbrooke, and several of his students, Guillaume Millette, Evelyne Lacasse, and Renaud Binette.
